These Simple Homemade Granola Bars are a delicious and healthy snack that you can feel good about eating. Homemade Granola Bars

Ingredients
- 1/2 cup Butter (melted, can use coconut oil to make it dairy free)
- 1/2 cup Maple syrup
- 2 Egg
- 2 tsp Vanilla extract
- 2 cup Old fashioned oats (we love one degree foods brand, its gf as well)
- 1 cup Einkorn flour (Can sub gluten free as well. See note below)
- 1 tsp Sea salt (we love pink himalayan)
- 1 cup Unsweetened shredded coconut
- 1 cup Mini chocolate chips (see note below)
Instructions
- Preheat oven to 350. Line a 9x13 with parchment paper Mix 1/2 cup Butter melted, 1/2 cup Maple syrup, 2 Egg, and 2 tsp Vanilla extract in a large bowl. Then add in 2 cup Old fashioned oats1 cup Einkorn flour, 1 tsp Sea salt, 1 cup Unsweetened shredded coconut, and 1 cup Mini chocolate chips. Mix well.
- Press into 9x13 pan in an even layer. We hands if oats are sticking to them Bake for 20-25 minutes, until golden brown. Remove, cool, slice, enjoy!
- Can store in freezer! Just thaw on the counter overnight. Substitutions Egg sub: 2 tbsp ground flax 6 tbsp water. Mix, let gel. Add in place of eggs Gluten free: can use 1:1 flour sub here Dairy free: sub coconut oil or ghee for butter, melted Nut free: don't add nut mix-ins
Notes
einkorn flour
- You can use all purpose or gluten free flour. Just sub 3/4 cup instead of a full cup.
coconut and chocolate chips
- You can sub in any other mix ins your family will like! Use any nuts, dried fruit, chocolate, etc.
- I would add in about 2 cups total of whatever else you pick.
