Homemade Meatball Subs with Roasted Garlic Butter

If I had to pick a dinner that everyone raved about…this is at the top of the list!
I shared a while ago how, like many of you, May is a busy busy month! One thing I love to do to set myself up for success is to pre meals ahead of time. One of those weeks I chose to prep a bunch of chicken and beef meatballs. I used them in various recipes and cooking styles (i.e. crock pot, oven, etc).
This recipe was hands down a favorite! We happened to have a large group over that night and the reviews were all the same, DELICIOUS!
Most of the items I used can be prepped way in advance, so on the day of all you have to do it heat and serve! Love meals like that. Here’s how I did it:
- At the start of the week I made a bunch of meatballs! Some with chicken and some with beef. The instructions and recipe is here.
- A few days in advance I prepped the homemade buns. All I did was use the 30 min bagel recipe, double it, and shape into small baguette shapes. Baked for the same amount of time as recipe. I stored in ziploc and froze until day of.
- I prepped the garlic butter a few days in advance as well. Just roasted a head of garlic for 25 min in a covered dish with some olive oil. Let it cool. Added the soft cloves to 1 cup of butter, and added 1 tsp of happy salt (but you can just use a salt and pepper mix if you don’t have it). Store in the fridge until you need to use. Will need to soften a bit before you brush onto buns.
- Since I baked the buns a few days before, I thawed them on the counter all day and reheated for 5 min at 350. Once they came out of the oven I brushed with garlic butter!
- Day of, place frozen meatball on a tray, bake at 375 for 20-25 min, or until done in the center. I then add the cooked meatballs to a pot of simmering sauce (I love Raos)
- Assemble sandwiches, Voila! Dinner is done! You can add fresh basil, parm, pesto, or mozzarella cheese to the top! So many options!
