Homemade Oreo Dupe

Homemade Oreo Dupe

Ingredients

  • 1 1/2 cup Einkorn flour (use 1 1/4 cup all purpose flour or gluten free flour)
  • 1 tsp Pink himalayan salt
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 3/4 cup Dutch processed cocoa powder
  • 3/4 cup Cane sugar
  • 1 tsp Vanilla extract
  • 1 Egg
  • 10 tbsp Butter (melted )

Icing

  • 3 cup Powdered sugar (we use the organic version)
  • 4 tbsp Butter (melted)
  • 1 tsp Vanilla paste (vanilla extract will work too)
  • 1/4 tsp Pink himalayan salt
  • 1/4 cup Milk

Instructions

  • Preheat oven to 350
  • In bowl of a stand mixer or large mixing bowl, add  1 1/2 cup Einkorn flour, 1 tsp Pink himalayan salt, 1 tsp Baking powder, 1/2 tsp Baking soda, 3/4 cup Dutch processed cocoa powder, and 3/4 cup Cane sugar. Mix well
  • Then mix in separate bowl 10 tbsp Butter (melted ), 1 tsp Vanilla extract, and 1 Egg. Add to dry ingredients and mix until combined.
  • Scoop 1 tsp of dough and roll into a ball. Place on a baking sheet with space to spare as they will spread.
  • Continue until tray is full, bake for 10-12 minutes, until set
  • Continue until all cookies are baked, cool completely.

Make Icing

  • While waiting for cookies, add 3 cup Powdered sugar, 4 tbsp Butter, 1 tsp Vanilla paste, 1/4 tsp Pink himalayan salt, and 1/4 cup Milk into a medium bowl and whisk well. Refrigerate for 1 hour.
  • Once cookies are cooled, add 1 tbsp of icing onto cookie, sandwich on top with another.
  • Store in the fridge in bag or airtight container. Enjoy!

Notes

Icing Tip
  • It stays put in the center of cookie if you refrigerate in advance but if you don't have time add to cooled cookie and refrigerate right away.
