Our honey mustard salad w/ crispy chicken tenders is a clean version of my favorite salad growing up. It features crispy, golden-brown chicken tenders tossed with a vibrant mix of fresh vegetables like lettuce, tomatoes, cucumbers, and banana peppers. The star of the show is a clean homemade honey mustard dressing made with simple ingredients like honey, Dijon mustard, and vinegar. You can also sub in your favorite clean store bought version. Enjoy this salad on a hot summer day or a lighter option you add to a pita for a heartier meal.

Honey Mustard Salad w/ Crispy Chicken Tenders
Servings: 8
Ingredients
- 1/2 cup Honey mustard (buy your favorite our make our 5 minute dressing)
- 16 Chicken tenders (buy your favorite or make ours, get or make gf if needed)
- 6 cup Lettuce (any kind, chopped)
- 1 Carrot (grated)
- 1/2 cup Banana peppers (diced into pieces)
- 1/2 cup Cheddar cheese (grated, leave out for df option)
- 8 Pitas (optional-buy your favorite or make ours)
Instructions
- Preheat oven and cook 16 Chicken tenders according to cooking directions
- While chicken is cooking, chop 6 cup Lettuce and 1/2 cup Banana peppers.
- Add to a bowl and then add in 1/2 cup Cheddar cheese cheese and 1 Carrot shredded
- Add in any other veggies you would like to at this point (like cucumbers, tomatoes, olives, etc)
- When chicken is done cooking, cool for 5 minutes, chop into pieces and add to salad
- Drizzle with 1/2 cup Honey mustard mustard and toss
- Eat as a salad or you can divide out into 8 Pitas and use as a sandwich
