Insta Pot Shredded Beef with Lime Tacos

Ingredients

  • 2 tbsp Olive oil
  • 2 lb Beef chuck roast
  • 1 Onion (finely chopped)
  • 1/2 tsp Cumin
  • 1/2 tsp Oregano
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 1/2 tsp Kosher salt
  • 1 Lime (juiced)
  • 2 cup Beef broth
  • 1 tsp Onion powder
  • 10 Tortilla (Healthier Homemade Staple Recipe or your favorite Store Bought)
  • 8 oz Sharp cheddar (shredded from a block)

Instructions

  • Heat your Insta Pot to 325 f and pour in the EVOO.
  • While it is heating up, mix all of the spices in a small bowl. Cumin, oregano, garlic powder, chili powder and kosher salt. Rub the meat with these spices and let them soak in.
  • Rub the meat with these spices and let them soak in.
  • Sear the chuck roast meat on both sides with onion.
  • Remove the roast and place the grate in. Place the meat on top of the grate. Pour the lime juice on top of the meat. Add in the beef broth and finally place the lid on the Instapot.
  • Secure the lid and seal. Place on manual and cook for 50 minutes. Let the Insta Pot or pressure cooker release slowly for 20 minutes and then release.
  • Remove the meat and the grate.  Place the meat back in the slow cooker.
  • To make the meat shredded I like using my mixer on low-it shreds it so fast and creates incredibly flavorful beef.

Assemble

  • Use homemade tortilla shells or your favorite store bought. Place a scoop of the beef onto your tortilla and add cheese and your favorite toppings.

Notes

Homemade Flour Tortillas
  • Have you tried our homemade flour tortillas? Once you try these, you will never go back to store bought. Place the shell flat and load with a heaping scoop of the shredded beef.
  • Top with your favorite toppings.
  • Roll the taco up and enjoy!
Make Individual Tacos and Freeze
  • Assemble the tacos and cold in half.
  • Place on a parchment lined baking sheet and place in the freezer for 2 hours.
  • Transfer to a freezer safe ziploc bag and place in the freezer. Store up to 2 months.
Reheat Individual Tacos
  • To reheat just pop in the oven at 425 for about 20 minutes.
  • Or if you are really in a hurry place them in the microwave at medium heat for 1:30- 2:00 minutes.
