This Homemade Italian Pasta Salad with fresh veggies is a vibrant and flavorful dish that’s perfect for summer. Packed with fresh vegetables like tomatoes, cucumbers, bell peppers, and onions, all tossed with a light and zesty homemade dressing. The dressing typically includes a combination of olive oil, lemon juice, herbs like oregano and basil, and spices like garlic and Italian seasoning . You can customize it with your favorite vegetables and add protein by including grilled chicken or shrimp.
Italian Pasta Salad

Ingredients
Salad
- 16 oz Pasta (I used Jovial GF, use whatever you have!)
- 1 cup Peppers (diced, red, yellow, or orange)
- 1 cup Cucumber (diced)
- 1 cup Tomato (diced)
- 1 can white beans (rinsed, drained)
- 8 oz Mozzarella (chopped)
Dressing
- 1/2 cup Extra virgin olive oil
- 1/2 cup Lemon juice
- 2 tbsp Honey
- 2 tbsp Dijon mustard
- 1/2 tsp Pink himalayan salt
- 1/4 tsp Black pepper
- 1 tsp Garlic powder
- 1 1/2 tsp Italian seasoning
Instructions
Dressing
- Mix 1/2 cup Extra virgin olive oil, 1/2 cup Lemon juice, 2 tbsp Honey, 2 tbsp Dijon mustard, 1/2 tsp Pink himalayan salt, 1/4 tsp Black pepper, 1 tsp Garlic powder, and 1 1/2 tsp Italian seasoning. Whisk or shake well. Set aside or store in fridge if prepping in advance
Pasta Salad
- Boil 16 oz Pasta according to package, drain, and rinse.
- While pasta is cooking, chop 1 cup Peppers, 1 cup Cucumber, & 1 cup Tomato ( or if you prepped already, skip this step.
- Chop 8 oz Mozzarella, rinse and drain 1 can white beans .
- Once pasta is rinse and drained, add in veggies, cheese, white beans, and dressing.
- Mix well. You can serve immediately or let chill for a few hours or overnight in the fridge, covered.

- I used gluten free but use what you prefer. Almost any shape would work here
