Italian Pasta Salad

Ingredients

Salad

  • 16 oz Pasta (I used Jovial GF, use whatever you have!)
  • 1 cup Peppers (diced, red, yellow, or orange)
  • 1 cup Cucumber (diced)
  • 1 cup Tomato (diced)
  • 1 can white beans (rinsed, drained)
  • 8 oz Mozzarella (chopped)

Dressing

  • 1/2 cup Extra virgin olive oil
  • 1/2 cup Lemon juice
  • 2 tbsp Honey
  • 2 tbsp Dijon mustard
  • 1/2 tsp Pink himalayan salt
  • 1/4 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 1/2 tsp Italian seasoning

Instructions

Dressing

  • Mix 1/2 cup Extra virgin olive oil, 1/2 cup Lemon juice, 2 tbsp Honey, 2 tbsp Dijon mustard, 1/2 tsp Pink himalayan salt, 1/4 tsp Black pepper, 1 tsp Garlic powder, and 1 1/2 tsp Italian seasoning. Whisk or shake well. Set aside or store in fridge if prepping in advance

Pasta Salad

  • Boil 16 oz Pasta according to package, drain, and rinse.
  • While pasta is cooking, chop 1 cup Peppers, 1 cup Cucumber, & 1 cup Tomato ( or if you prepped already, skip this step.
  • Chop 8 oz Mozzarella, rinse and drain 1 can white beans .
  • Once pasta is rinse and drained, add in veggies, cheese, white beans, and dressing.
  • Mix well. You can serve immediately or let chill for a few hours or overnight in the fridge, covered.

Notes

Pasta
  • I used gluten free but use what you prefer. Almost any shape would work here
