Leftover Thanksgiving Pancake

Ingredients
- 2 cup Stuffing (use gf if needed)
- 2 cup Mashed potatoes
- 1 Zucchini shredded
- 1 tsp Onion powder
- 1 tsp Salt
- 1/2 cup Sharp cheddar cheese shredded
- 2 Egg
Instructions
- Preheat oven to 425
- In a medium bowl combine 2 cups of stuffing, 2 cups of mashed potatoes, 1 tsp. salt, 1 tsp. onion powder, 2 eggs and 1/2 cup of shredded sharp cheddar cheese.
- Blend with a mixer for 1 minute.
- Line a sheet pan with parchment paper. Use a large scoop and scoop onto the parchment lined sheet pan. Press with a spatula to flatten. Do this with 6 at a time on the sheet. Bake in the oven for 30 minutes total. Flipping at 15 minutes.
