Lemon & Dill Chicken Salad
Ingredients
- 2 lb Chicken breast (can use thighs)
- 2 cup Grapes (sliced)
- 3/4 cup Mayonnaise
- 1 tsp Dried dill
- 1 tsp Salt and pepper (each)
- 1/2 cup Pecan pieces
- 1 Lemon (zest and juice)
Instructions
- Cook 2 lb Chicken breast at 350 degrees for about 20-25 minutes until cooked through. Allow to rest. Then cube into small pieces.
- Add cubed chicken to a mixing bowl and add 2 cup Grapes chopped, 3/4 cup Mayonnaise, 1 tsp Dried dill, 1 tsp Salt and pepper, 1/2 cup Pecan pieces, and 1 Lemon juiced and zested. Mix well. For best flavors, allow to set overnight in the fridge before eating to give the seasonings time to take.
- Serve on bread, with crackers, in a wrap, or on a bed of lettuce! So versatile and tasty!
