Make Ahead Chicken Meatballs

We love these for so many uses!  Consider them one of our base recipes- you can use them in soups, pastas and they are so flavorful they can be used on their own.  We loved to freeze them ahead of time and split the batch for 2 easy meals throughout the week.  Note when freezing to freeze them when they are still raw.

Ingredients:

1 lb. organic ground chicken
1/3 cup flour
2/3 cup panko bread crumbs
2 tsp. salt
1 tsp. Italian seasoning
1/2 tsp. coriander
1 tsp. garlic powder
1 tsp. onion powder
2 eggs

Directions

In a bowl combine panko, salt, Italian seasoning, 1/2 tsp. coriander, 1 tsp. garlic powder, 1 tsp. onion powder
Mark as complete

Add in the chicken and mix with your hands. Add in the 2 eggs and mix thoroughly.

Roll into balls (we used the small scoop) and it made 28 meatballs.
