Homemade McGriddle Dupe

These Homemade McGriddle Dupes are a delicious and healthier take on the classic fast-food breakfast sandwich. Using einkorn flour for the mini pancake “buns” adds a subtle nutty flavor and a boost of nutrients.  You can always use all purpose flour as well, all the details are below. The fluffy and slightly sweet pancakes perfectly cradle a savory sausage and egg filling. This recipe allows you to control the ingredients, ensuring a more wholesome and satisfying breakfast. These homemade McGriddles are a fun and easy way to enjoy a favorite breakfast treat without the processed ingredients and excessive grease. McGriddle Dupe

Ingredients

Griddle Cake Batter

  • 2 cup Einkorn flour (use 1 3/4 all purpose)
  • 2 tsp Baking powder
  • 1/3 cup Coconut sugar (use cane sugar for nut free option)
  • 1/2 tsp Celtic salt
  • 1 Egg
  • 2 tsp Maple extract
  • 1 tbsp Butter (melted)
  • 1 cup Milk

Egg Patty

  • 6 Egg
  • 1/4 cup Cottage cheese (can omit if dairy free)
  • 1/2 tsp Celtic salt
  • 1/2 tsp Black pepper

Other Ingredients

  • 8 Sausage patties (We love Applegate Chicken & Maple)
  • 4 Cheese slices (cut in half, can omit if dairy free)
  • 1/2 cup Maple syrup (to dip)

Instructions

Eggs and Sausage

  • Preheat oven to 400 degrees
  • On a sheet tray, add 8 Sausage patties. Bake for 10-12 minutes until golden brown. Set aside to cool.
  • Grease a 10-12 in cast iron pan (stainless steel would work too). Add 6 Egg, 1/2 tsp Celtic salt, 1/2 tsp Black pepper, and 1/4 cup Cottage cheese to a bowl. Whisk.
  • Add parchment paper, then dump in egg mixture. Bake for 12-14 minutes until eggs are set. Set aside to cool.

Make Griddle Cakes

  • Heat a large cast iron griddle or other large pan.
  • In a bowl add 2 cup Einkorn flour, 2 tsp Baking powder, 1/2 tsp Celtic salt, and 1/3 cup Coconut sugar. Whisk.
  • Then add 1 Egg, 2 tsp Maple extract, 1 tbsp Butter, and 1 cup Milk. Whisk well into batter.
  • Add 1 tbsp of batter to the hot griddle, shape into a circle the size you desire. Let cook a few minutes on one side until golden brown. Flip, and cook the other, then remove from heat.

Assemble

  • Cut eggs to shape using the rim of a cup or a biscuit cutter until you have enough circles that fit the size of the griddle cakes. Grab 4 Cheese slices and cut in half
  • Place 1 griddle cake down on a sheet tray, add sausage, egg circle, half cheese slice to fit sandwich, then top with griddle cake.
  • Stick in preheated 350 degree oven for 5 minutes to melt cheese. Remove from oven.
  • Pour 1/2 cup Maple syrup into a small ramekins, dip sandwich in, enjoy!

Notes

Storage
  • I wrap in foil and freeze the entire sandwich for the week. I thaw in the fridge overnight then reheat in the oven at 350 for 10-12 minutes.
allergens
  • this can be made dairy and nut free based on your choices! Don't add cheese to sandwich or just leave our the cottage cheese for the eggs. Instead of coconut sugar add cane.
