Mini Einkorn Flour Chocolate Chip Cookies

My kids BEG me daily for treats in their lunches. I’m not a huge fan of adding in a bunch of sugar because I’ve been a lunch room volunteer and seen what they choose to eat. I want the little time they have in there eating to fill their body with good fuel.

But every so often I make these mini Einkorn flour chocolate chip cookies and for a special treat! They are made with healthier ingredients and since they are mini don’t pack as big of a punch with the sweets.

I also have a great tip to help with moderation! I make a dozen of these at a time, roll the rest of the dough into small little balls, freeze, and store in a ziploc bag. When you want to bake just toss on a cookie sheet at 350 for 10 min, fresh cookies!

Ingredients:

Adjust Servings
2sticks butter, softened
2 eggs
2 tsp vanilla
2c coconut sugar
1 tsp baking soda
1 tsp salt
3c einkorn flour (or 2.5 c regular ap flour)
1bag chocoalte chips (prefer without soy lectin)

Directions

1.
Make Batter
Cream together softened butter and coconut sugar Add in eggs and beat until light in color and fluffy Add in vanilla, whisk Sift flour, salt, and baking soda and add in wet ingredients. Add in chocolate chips, stir gently

To Bake
Scoop out as many as you wish with a tiny cookie scoop or 1 tsp measure Bake at 350 for 8-10 min

To Store Extras
Scoop out extras using a tiny cookie scoop or 1 tsp measure Place on a cookie sheet and in freeze for 2 hours Take out and place frozen cookie balls in ziploc bag Store until needed! To Bake Frozen: 350 for 10 min right out of the freezer!
