Nostalgic Ice Cream Sandwiches

Picture it, its summer, 1998. You’ve been playing outside all day. You are sweaty, hot, and tired. Just when you are about to call it a day, you hear that beautiful music come rolling along the neighborhood.

You run inside, don’t even ask, grab a dollar from your moms purse (sorry, mom) and you and your friends run as fast as you can waving your arms above your head so they don’t pass you by.

Now the hard part, which item to choose!?! For me, this was never really an issue. If the chocolate chip cookie ice cream sandwich was there, it was mine!

You’d unwrap it. Take that first delicious bite, and all your energy was restored!

These ice cream sandwiches were a huge part of my childhood! In healthier homemade fashion, I had to make these myself so that we could enjoy them without eating all the unnecessary added stuff we don’t need.

And what a huge success!!!

These are a larger size but you could always use a smaller size cutter to decrease that, no problem. We just went for it over here, lol.

These were soft, chewy, and honestly tasted just like the ones we would buy from the ice cream man. We just used plain vanilla ice cream but you could add in different mix ins if you want. We also rolled them in chocolate chips, you could leave that off or roll in something else!

Ingredients:

Adjust Servings
2 1/2c einkorn flour ( or 2 1/4 c ap flour)
1stick butter, softened
1 c coconut sugar
2 eggs
1 tsp vanilla extract
1 tsp baking soda
1tsp salt
2bags chocolate chips (regular and mini)
1 pint ice cream of choice

Directions

Make Cookies
Combine the butter and sugar. Beat with whisk or hand mixer until well combined and butter appears light and fluffy. Add in eggs and vanilla. Whisk well. Then add in dry ingredients, mix well Add in 1 bag of chocolate chips Spread out onto a sheet pan into a rectangle. Try and make it 1/4 in thick and as even as possible. Bake at 350 for 10-12 min, until golden brown (make ice cream part while cookies bake) Allow to cool for 5 min, then use a round biscuit cutter to shape into smaller circular cookies

Make ice cream
Microwave ice cream until very soft. You can add any mix ins here. Place in a 9x13 pan and freeze for 30 min. Once frozen, use same size biscuit cutter to cut ice cream into circles Place ice cream disc in between 2 cookie circles. Place on a pan and freeze for 1 hr. You can serve now or you can wrap in ziploc or parchment paper for a later use date!
