Oatmeal & Apple Spice Cookies

Oatmeal & Apple Spice Cookies

Ingredients

Apple Pie Compote

  • 1 tbsp Butter
  • 4 Apples (peeled and diced)
  • 2 tsp Cinnamon
  • 1/8 tsp Ground nutmeg
  • 1/4 cup Coconut sugar (use brown sugar for nut free option)

Cookie Base

  • 1 cup Butter (room temperature)
  • 1 cup Cane sugar
  • 1/2 cup Coconut sugar (or brown sugar)
  • 2 Eggs
  • 2 tsp Vanilla
  • 3 cup Einkorn flour
  • 1/2 cup Old fashioned oats
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 2 tsp Cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup caramel sauce Buy your favorite or use our 10 minute caramel sauce- recipe linked above

Instructions

  • In a medium skillet over medium heat, add 4 Apples peeled and diced with 1 tbsp Butter. Then add in 2 tsp Cinnamon, 1/8 tsp Ground nutmeg, and 1/4 cup Coconut sugar.
  • Cook down for about 8-10 minutes until apples are soft. Take off heat, cool.
  • In bowl of a stand mixer with paddle attachment or in a large bowl with a hand mixer, add 1 cup Butter room temperature, 1 cup Cane sugar, and 1/2 cup Coconut sugar. Cream for 2-3 minutes.
  • Then add in 2 Eggs, beat another 2-3 minutes.
  • Add in 2 tsp Vanilla.
  • Turn off mixer, add in 3 cup Einkorn flour, 1/2 cup Old fashioned oats, 1 tsp Salt, 1 tsp Baking soda, 2 tsp Cinnamon, and 1/4 tsp Ground nutmeg. Mix on low speed until ingredients are combined.
  • Line 2 cookie sheets with parchment paper, scoop out cookie dough by using a 1/4 c scoop. Roll into a ball, press a small whole in the middle, fill with 1 tbsp of spiced apple mixture.
  • Continue until all cookies are shaped and filled.
  • Refrigerate for 45 minutes, last 10 minutes of chilling preheat oven to 350 degrees.
  • Pull out dough, put cookies on sheet separated by a few inches as they will spread.
  • Bake at 350 for 18-20 minutes until golden brown.
  • Remove and cool on wire rack for 10 minutes, continue baking until all cookies are done.
  • Once cooled, drizzle with a small amount of caramel on the top!
  • Enjoy!

Notes

storage
  • store cookies lying flat in a ziploc bag, layer with parchment in between. Can also freeze for up to 2 months in a ziploc bag. Thaw on counter before eating.
