On the Go Steak and Cheese Quesadilla with Cilantro Lime Dipping Sauce

May has no off button, ya feel me?! It can be SO hard to keep fueling ourselves well during this month specifically. But I have been determined to keep feeling my best by prepping all I can and bringing easy grab and go dinners with me if needed.
This is one of those meals! So easy to prep in advance, toss together, and take with you while on the run! I have learned to wrap this up in such a way that is stays warm for a while and is still portable. And don’t skimp on the dipping sauce! It just rounds out this entire dish with the right burst of flavors!
You can pre cook the steak in advance and either freeze or store in the fridge for one day. The sauce can be made a few days in advance as well. I like to make my own tortillas with Jovial Einkorn flour. I do this a few times a month, make a huge batch, and store in the freezer! The recipe for those can be found here. But you can always just buy your favorite as well or even serve this as a rice bowl with some roasted red peppers and onions.
