Onion Buns

Equipment

Ingredients

First step for dough

  • 2 tbsp Extra virgin olive oil
  • 1 Onion (Chopped super fine)
  • 1 1/2 cup Whole milk
  • 6 oz Organic pineapple juice
  • 2 tbsp Butter
  • 1/3 cup Honey
  • 2 tsp Pink himalayan salt

Second Step for Dough

  • 2 1/2 tsp Dry yeast
  • 6 1/2 cup Einkorn flour

Topping

  • Egg
  • 1 tsp Sesame seeds
  • 1 tsp Poppy seeds

Instructions

  • In a Dutch oven or other large pot heat over medium heat.
  • Add in the 2 TBSP.2 tbsp Extra virgin olive oil and 1 Onion chopped.
  • Cook stirring frequently until onions are tender and start to turn light brown.
  • Remove the onions from the pan and place in a small bowl.
  • Turn the heat down to low and pour in the 1 1/2 cup Whole milk, 6 oz Organic pineapple juice, 2 tbsp Butter, 1/3 cup Honey and 2 tsp Pink himalayan salt.
  • Heat until it reaches a temperature between 100 f and 110f. Do not overheat. Remove from burner.

  • Add in the 2 1/2 tsp Dry yeast .  Let rest 5-10 minutes until bubbly. This is how you know your yeast is activated.
  • Slowly add in the 6 1/2 cup Einkorn flour 1/2 cup at a time stirring with a handle end of a wooden spatula.  Depending on the humidity you might only need 6 cups of einkorn flour. The dough should be sticky, but not enough to stick to your fingers. Knead with your hands about 5 minutes.
  • Place back in the pan and place the lid on.
  • Let sit until double in size about an hour. 
  • Line a baking sheet with parchment paper. Spray with avocado oil or extra virgin olive oil.
  • Punch down and split into 12 balls. Roll each ball until smooth.
  • Place on the parchment lined baking sheet and cover until doubled in size (about an hour).
  • Preheat oven to 375f.
  • Whisk the egg and brush on each roll.
  • Sprinkle with the onions you removed, poppy seeds and sesame seeds to your liking.
  • Place in the oven and bake 16-20 minutes until the tops turn golden brown.

Notes

Freezer Instructions
  • Once cooled to room temperature, place in the freezer on the tray. Flash freeze for 1 hour. Place in a freezer safe bag and store for up to a month.
