Pancake Mix

Ingredients

Dry Ingredients

  • 9 cup Einkorn flour (can use gf flour or ap flour, see note below)
  • 2 cup Buttermilk powder
  • 3 tbsp Baking powder
  • 2 tbsp Fine salt
  • 4 tbsp Sugar (can use granulated or coconut sugar)

Wet Ingredients

  • 1 Egg
  • 1 tsp Vanilla extract
  • 2/3 cup Water

Instructions

Make Dry Mix

  • To a large glass jar or container, add 9 cup Einkorn flour or flour of choice, 2 cup Buttermilk powder, 3 tbsp Baking powder, 2 tbsp Fine salt, 4 tbsp Sugar. Mix well. Cover with lid until use.

Make Pancakes

  • When ready to make pancakes, add: 2/3 cup Water, 1 tsp Vanilla extract, & 1 Egg Per 1 cup pancake mix.
  • Once added, whisk well, let set for 5 minutes. Pour onto hot, greased griddle, cook for 1-2 minutes on each side, and enjoy with maple syrup or your favorite toppings!

Notes

Flour
  • Use 8 cups flour for gf or all purpose or gf for this recipe.
