Peanut Butter Chip Heavenly Hunk Dupe

Ingredients
- 1/2 cup Butter (room temperature, can use coconut oil to make it dairy free)
- 1/2 cup Peanut butter (creamy is best)
- 2 Egg
- 2 tsp Vanilla extract
- 1/2 cup Coconut sugar
- 1/2 cup Honey
- 2 cup Quick cooking oats (We love One Degree Foods)
- 1 tsp Pink himalayan salt
- 1 1/2 cup Flour (can use gluten free, einkorn, or all purpose)
- 1 tsp Baking soda
- 10 oz Chocolate chips (I used Mini, Nestle Allergen friendly)
Instructions
- Preheat oven to 350 degrees. Line a 9x13 inch pan with parchment paper.
Make Batter
- In bowl of a stand mixer or using a hand mixer, add 1/2 cup Butter and 1/2 cup Peanut butter with 1/2 cup Coconut sugar. Mix well for 2 minutes.
- Then add in 2 Egg, 2 tsp Vanilla extract, and 1/2 cup Honey. Mix well for another 2 minutes until fluffy looking.
- Then add in 2 cup Quick cooking oats, 1 1/2 cup Flour, 1 tsp Baking soda, 10 oz Chocolate chips, and 1 tsp Pink himalayan salt. Mix well until all ingredients are incorporated.
- In lined 9x13 inch pan, add mixture and press down firmly until even and spread out throughout pan. Helps to wet hands so mixture doesn't stick!
- Bake at 350 for 25-30 minutes until set in the middle but do no overbake!
- Allow to cool on wire rack for 10 minutes. Then remove parchments, slice into squares, and enjoy!
