Pecan Crusted Chicken Nuggets

Ingredients

  • 10 oz Pecans
  • 1/2 cup Einkorn flour
  • 2 Eggs
  • 2 lb Ground chicken
  • 2 tsp All purpose seasoning blend
  • 4 eggs

Instructions

  • Line a baking sheet with parchment paper.
  • In a bowl, add 2 lb Ground chicken, 2 Eggs , and 2 tsp All purpose seasoning blend.
  • Mix well.
  • Scoop out a heaping tablespoon of mixture, shape into desired shape, and place on parchment paper.
  • Continue until all are shaped.
  • Freeze for 30 minutes.
  • While freezing, add 10 oz Pecans to a blender and blend until a course meal is formed.
  • Add blended pecans to a shallow dish with 1/2 cup Einkorn flour.
  • In a separate shallow dish, add 4 eggs and whisk.
  • Set both aside.
  • Preheat oven to 400 degrees.
  • Once chicken nuggets are frozen, dunk into egg mixture then coat in pecan/flour mixture.
  • Place back on parchment lined baking sheet.
  • Bake at 400 degrees for 25-28 minutes, flipping halfway through and again for a few minutes at the end to crisp all sides evenly.
  • Cool and enjoy.

Notes

Storage
  • store in ziploc bag in fridge for up to 4 days, reheat in oven at 350 for 10 minutes.
Other Option
  • Can freeze after coating in flour/pecan mixture before baking. Remove from freezer and follow the baking instructions, maybe adding an extra 5-7 minutes.
