Pecan Pie Granola

Ingredients

Granola Recipe

• 3 cup Old fashioned oats
• 1/2 cup Einkorn flour (see note below)
• 1 tsp Sea salt
• 1 tsp Ground cinnamon
• 1/2  cup Butter (melted)
• 1/2 cup Honey
• 1/2 cup Coconut sugar
• 1 tsp Vanilla extract
• 2 cup Pecans (roughly chopped)

Instructions

• Preheat oven to 350 degrees. Grab a sheet pan, large bowl, and small glass mixing cup.
• In a large bowl, add 3 cup Old fashioned oats, 1/2 cup Einkorn flour, 1 tsp Sea salt, 1 tsp Ground cinnamon, 1/2 cup Coconut sugar, and 2 cup Pecans. In the small glass mixing cup mix the melt 1/2  cup Butter, 1/2 cup Honey, and 1 tsp Vanilla extract.
• Combine wet and dry ingredients in the large bowl and toss to coat everything.
• Add on the baking sheet and place in the oven for 10 minutes. Mix up the granola and place back in the oven an additional 8-10 minutes.
• Remove from oven and allow to cool. Break up into pieces and store in an airtight container for a few weeks.

Notes

Einkorn Flour

• Can use all purpose flour here but use 1/4 cup instead of a 1/2 cup.

Oats

• Use gf oats here if needed. We use One Degree Foods old fashioned oats we buy from Costco.

Thaw

• Allow granola to set on the counter overnight to thaw and come to room temp. Store in airtight container.
