Pork Stew
Servings: 6
Ingredients
- 4 piece Uncured bacon (Chopped)
- 1 Pork tenderloin (chop into cubes)
- 1 Onion (finely chopped)
- 3 Carrot
- 2 Celery sticks (peeled and chopped)
- 8 Redskin potatoes (cubed)
- 2 Whole garlic cloves (finely chopped)
- 2 tbsp Einkorn flour (can use regular flour)
- 1 tsp Pink himalayan salt
- 1/2 tsp Dried oregano
- 1/4 tsp Dried thyme
- 2 tbsp Organic tomato paste
- 4 cup Chicken broth (kettle and fire)
Instructions
- Heat a stock pot or Dutch oven on the stove top to medium.
- Add in the bacon, pork loin. Cook for 5 minutes. * If you froze pork loin no need to thaw! Just use right from freezer
- Add in the onion, carrot, celery and potatoes. * If you froze veggies, no need to thaw. Cook stirring frequently until the potatoes are browned and celery is softened.
- Sprinkle in the flour and coat completely.
- Add in the remaining ingredients and bring to a boil. Turn down to a simmer and place the lid on. Cook for 30-40 minutes until the potatoes are cooked through.
- Serve and enjoy!
Notes
Storage
- Once you make the soup, allow it to cool. Then add to a glass mason jar or other airtight container. Make sure not to overfill and leave room for freezing. Freeze for up to 2 months.
Reheat
- Place in the refrigerator the night before you would like to eat. If storing in a glass jar, remove the lid and place a paper towel over top. Reheat at 1 minute intervals stirring in between until cooked through.
OR - Place in the refrigerator the night before. Pour into a sauce pan over medium heat and stir frequently until cooked through.
