Prepped Mashed Potato Trick

Ingredients
- 12 Russet potato (peeled and chopped)
- 24 Silicone liners (buy on amazon or home goods! see note below)
- 1 cup Milk (can use dairy free alternative)
- 1/2 cup Butter (can use ghee to make dairy free)
- 2 tsp Salt and pepper (each)
Instructions
- Boil water in large pot, add potatoes and cook for 15-20 minutes until fork tender.
- Drain water, add butter, salt & pepper. Drizzle in milk and begin to whisk. You might not need all the milk so add as needed until they reach a fluffy, light texture.
- Grab muffin tins and silicone molds, line tin. Scoop mashed potatoes into liners filling about 1/2 full. Freeze for 2 hours
- Once frozen, remove from liners and store frozen potato circles in ziploc bag to use for recipes!
Notes
Silicone Liners
- You can use parchment paper liners as well but silicone holds up so well! You can often find a pack at Home Good for $4.99. Worth every penny!
