Prime Rib Nachos

Ingredients

  • 3 cup Prime rib (chopped)
  • 16 oz Beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Garlic salt

Cheese Sauce

  • 3 tbsp Butter
  • 3 tbsp Einkorn flour
  • 1/4 tsp Cayenne pepper
  • 1 tsp Pink himalayan salt
  • 2 cup Milk
  • 2 1/2 cup Gruyere cheese (reserve 1/2 cup of it)
  • 7 oz Corn tortilla chips

Instructions

  • Preheat the oven to 400f
  • In a saucepan over low/medium combine beef broth, worcestershire sauce and garlic salt. Bring to a low boil and simmer about 10 minutes.
  • Add in the 3 cups of chopped prime rib.
  • Let simmer 2-3 minutes and remove from heat.
  • In a sauce pan over low heat melt the butter, once melted whisk in the flour to create a paste.
  • Add in the milk and continue whisking until thickened.
  • Remove from heat and add in the 2 cups of cheese.
  • Spread the tortilla chips onto a parchment lined sheet pan.
  • Top with the beef- gently shake off the excess liquid.
  • Place the melted cheese on top.
  • Add on the sprinkled cheese and bake for 10 minutes at 400f.
