Prime Rib Nachos

Ingredients
- 3 cup Prime rib (chopped)
- 16 oz Beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Garlic salt
Cheese Sauce
- 3 tbsp Butter
- 3 tbsp Einkorn flour
- 1/4 tsp Cayenne pepper
- 1 tsp Pink himalayan salt
- 2 cup Milk
- 2 1/2 cup Gruyere cheese (reserve 1/2 cup of it)
- 7 oz Corn tortilla chips
Instructions
- Preheat the oven to 400f
- In a saucepan over low/medium combine beef broth, worcestershire sauce and garlic salt. Bring to a low boil and simmer about 10 minutes.
- Add in the 3 cups of chopped prime rib.
- Let simmer 2-3 minutes and remove from heat.
- In a sauce pan over low heat melt the butter, once melted whisk in the flour to create a paste.
- Add in the milk and continue whisking until thickened.
- Remove from heat and add in the 2 cups of cheese.
- Spread the tortilla chips onto a parchment lined sheet pan.
- Top with the beef- gently shake off the excess liquid.
- Place the melted cheese on top.
- Add on the sprinkled cheese and bake for 10 minutes at 400f.
