Protein Snack Cookies

Ingredients

  • 2 cup Old fashioned oats (I love One Degree Foods brand)
  • 1 1/4 cup Einkorn flour (all purpose flour works well, use 1 cup)
  • 1 tsp Pink himalayan salt
  • 1/2 tsp Baking soda
  • 2 Egg
  • 8 oz Cashew butter (warmed so its easier to pour)
  • 1/2 cup Maple syrup
  • 1 cup Coconut sugar
  • 1 tsp Vanilla extract
  • 10 oz Chocolate chips (we love Nestle Allergen-super clean)

Instructions

  • Preheat oven to 350. Line a cookie sheet with silicone mats or parchment paper
  • In a large bowl, add eggs, maple syrup, warmed cashew butter, and vanilla. Whisk well.
  • Then add oats, flour, salt, baking soda, coconut sugar, and chocolate chips. Stir to combine.
  • Scoop about 2 tbsp of dough (or larger if you wish) onto lined baking sheet. 
  • Bake at 350 for 10-12 minutes until golden brown and cooked through. ( Add a few more minutes if you made them large in size)
  • Place cooling rack for about 20 minutes. Store at room temp for 3-4 days or you can freeze for up to 2 months. Thaw on counter at room temp for an hour or so before eating.

Notes

Einkorn
  • Can use all purpose, just decrease to 1 cup
