Protein Snack Cookies

Ingredients
- 2 cup Old fashioned oats (I love One Degree Foods brand)
- 1 1/4 cup Einkorn flour (all purpose flour works well, use 1 cup)
- 1 tsp Pink himalayan salt
- 1/2 tsp Baking soda
- 2 Egg
- 8 oz Cashew butter (warmed so its easier to pour)
- 1/2 cup Maple syrup
- 1 cup Coconut sugar
- 1 tsp Vanilla extract
- 10 oz Chocolate chips (we love Nestle Allergen-super clean)
Instructions
- Preheat oven to 350. Line a cookie sheet with silicone mats or parchment paper
- In a large bowl, add eggs, maple syrup, warmed cashew butter, and vanilla. Whisk well.
- Then add oats, flour, salt, baking soda, coconut sugar, and chocolate chips. Stir to combine.
- Scoop about 2 tbsp of dough (or larger if you wish) onto lined baking sheet.
- Bake at 350 for 10-12 minutes until golden brown and cooked through. ( Add a few more minutes if you made them large in size)
- Place cooling rack for about 20 minutes. Store at room temp for 3-4 days or you can freeze for up to 2 months. Thaw on counter at room temp for an hour or so before eating.
Notes
Einkorn
- Can use all purpose, just decrease to 1 cup
