Pumpkin Crumble Muffins

Ingredients

Muffin Mix

  • 2 Egg
  • 1 tsp Vanilla extract
  • 1/4 cup Maple syrup
  • 1/4 cup Plain yogurt
  • 1/3 cup Olive oil
  • 1/2 cup Canned pumpkin
  • 2 3/4 cup Einkorn flour (see note below)
  • 1 tsp Sea salt
  • 1 tsp Ground cinnamon
  • 1/8 tsp Nutmeg
  • 1/8 tsp Clove
  • 1 cup Coconut sugar
  • 1/2 tsp Baking soda

Crumble Topping

  • 1/4 cup Butter
  • 1/2 cup Einkorn flour
  • 1/2 tsp Ground cinnamon
  • 1/4 cup Coconut sugar
  • 1/4 tsp Sea salt

Instructions

  • Mix all wet ingredients in a bowl for mixture only. In separate bowl, mix dry ingredients for muffin mix.
  • Then combine the two bowls and mix well. Line muffin tins with silicone or parchment liners. Fill 3/4 way full.
  • Combine topping ingredients and mix well with hands until crumb forms. Sprinkle 1-2 tsp on top each muffin.
  • Bake at 350 for 18-20 min, until set. Enjoy!

Notes

Einkorn Flour
  • You can sub with all purose flour but decrease the amount in the muffin mix to 2 1/4 cup and in the crumble topping to 1/3 cup!
