Pumpkin Crumble Muffins
Servings: 18
Ingredients
Muffin Mix
- 2 Egg
- 1 tsp Vanilla extract
- 1/4 cup Maple syrup
- 1/4 cup Plain yogurt
- 1/3 cup Olive oil
- 1/2 cup Canned pumpkin
- 2 3/4 cup Einkorn flour (see note below)
- 1 tsp Sea salt
- 1 tsp Ground cinnamon
- 1/8 tsp Nutmeg
- 1/8 tsp Clove
- 1 cup Coconut sugar
- 1/2 tsp Baking soda
Crumble Topping
- 1/4 cup Butter
- 1/2 cup Einkorn flour
- 1/2 tsp Ground cinnamon
- 1/4 cup Coconut sugar
- 1/4 tsp Sea salt
Instructions
- Mix all wet ingredients in a bowl for mixture only. In separate bowl, mix dry ingredients for muffin mix.
- Then combine the two bowls and mix well. Line muffin tins with silicone or parchment liners. Fill 3/4 way full.
- Combine topping ingredients and mix well with hands until crumb forms. Sprinkle 1-2 tsp on top each muffin.
- Bake at 350 for 18-20 min, until set. Enjoy!
Notes
Einkorn Flour
- You can sub with all purose flour but decrease the amount in the muffin mix to 2 1/4 cup and in the crumble topping to 1/3 cup!
