Pumpkin Garlic Sauce

Ingredients

  • 2 tsp Garlic (peeled and chopped)
  • 1/2 cup Canned pumpkin
  • 3/4 cup Milk
  • 1/4 cup Cream
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/8 tsp Ground cayenne pepper (optional)
  • 1/2 cup Parmesan (freshly grated is best)

Instructions

  • Heat a medium sauce pot over medium heat. 
  • Add a drizzle of oil and 2 tsp of peeled and chopped garlic
  • Sauté for a few minutes. Then add in 1/2 c pumpkin puree
  • Mix for a few minutes then add in 3/4 c milk, 1/4 c cream, whisk.
  • Then add in 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, 1/2 tsp black pepper, and a pinch (1/8 tsp) cayenne if desired. Whisk well
  • Once mixture bubbles add in 1/2 c grated parmesan cheese and whisk again. 
  • Remove from heat, add to a jar and cool before adding lid. 
  • Store in the fridge for up to 5 days or you can freeze, just leave room in the jar to expand. 
  • Serve over your favorite pasta or chicken!
