Pumpkin Spice Granola

Ingredients

  • 5 cup Old fashioned oats (We love One Degree Foods, use gf if needed)
  • 1 cup Einkorn flour (can use all purpose or gf flour, use 3/4 c)
  • 1 tsp Salt
  • 3/4 cup Coconut sugar (use 1/2 c cane sugar if you want to swap)
  • 2 tsp Ground cinnamon
  • 1 tsp Ginger powder
  • 1/4 tsp Allspice
  • 1/8 tsp Nutmeg
  • 1/2 cup Honey
  • 3/4 cup Butter (melted)
  • 1/3 cup Canned pumpkin
  • 1 cup Pumpkin seeds

Instructions

  • Preheat oven to 350 degrees and grab one large sheet pan 
  • In a bowl add 5 c old fashioned oats, 1 c einkorn flour, 1 tsp salt, 2 tsp ground cinnamon, 1 tsp ground ginger, 1/4 tsp allspice, 1/8 tsp ground nutmeg, and 3/4 c coconut sugar. Mix well
  • Then add in 1/2 c honey, 3/4 c melted butter, 1/3 c pumpkin puree, and 1 c pumpkin seeds. Mix it all together until well combined. 
  • Then add mixture to the sheet pan and bake for 15 minutes. 
  • Remove, mix around, and place back in for 15 minutes. 
  • Remove once more and mix well on sheet tray. Then bake again another 5-10 minutes until golden brown.
  • Remove from oven, let mixture cool. It will harden as it cools so do not overcook it.
  • Enjoy on your favorite yogurt or in a bowl with milk!

Notes

Storage
  • Once cooled, store in a large ziploc bag (might need 2) or other container that has a lid. Keeps for up to 2 weeks at room temperature.
Allergens
  • Use gf oats and gf flour for gf option, use 3/4 c if swapping in gf flour
