Pumpkin Spice Oat Bites

Ingredients

Muffin Mix

  • 3 cup Old fashioned oats (see note)
  • 1 cup Einkorn flour (see note below)
  • 1 cup Coconut sugar
  • 1 tsp Sea salt
  • 1 tsp Baking powder
  • 2 Egg
  • 1/2 cup Butter (melted)
  • 1 tsp Vanilla extract
  • 2/3 cup Canned pumpkin
  • 1 1/2 tsp Ground cinnamon
  • 1/4 tsp Clove
  • 1/8 tsp Nutmeg
  • 1/4 tsp Ginger powder

Drizzle

  • 1/2 cup Organic powdered sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Butter (melted)
  • 2 tbsp Milk

Instructions

Make Muffins

  • Preheat oven to 350. Line muffin tins with silicone muffin liners or parchment
  • In bowl, combine oats, flour, sugar, salt, baking soda. Add in spices.
  • Then in separate bowl melt butter, add eggs, vanilla, and pumpkin.
  • Combine bowls and mix well.
  • Scoop into muffin tips with ice cream scoop or 1/4 c scoop. Bake for 15-18 minutes. Until set. Allow to cool for 5 minutes.

Make Drizzle

  • Combine drizzle ingredients in a separate bowl and whisk well. Start with 2 tbsp of milk and add as needed. You don't want it too think so be careful adding!
  • Add drizzle to oat muffins after they have cooled for 5 minutes. Allow to set. Enjoy!

Notes

Einkorn Flour
  • You can use all purpose flour, just decrease to 3/4 cup
Old Fashioned Oats
  • Use regular or a gluten free kind if needed
Reheat
  • Preheat the oven to 350 f. Place on a parchment lined baking sheet and bake for 10-15 minutes, then add drizzle before eating.
