Pumpkin Spice Oat Bites
Servings: 18
Ingredients
Muffin Mix
- 3 cup Old fashioned oats (see note)
- 1 cup Einkorn flour (see note below)
- 1 cup Coconut sugar
- 1 tsp Sea salt
- 1 tsp Baking powder
- 2 Egg
- 1/2 cup Butter (melted)
- 1 tsp Vanilla extract
- 2/3 cup Canned pumpkin
- 1 1/2 tsp Ground cinnamon
- 1/4 tsp Clove
- 1/8 tsp Nutmeg
- 1/4 tsp Ginger powder
Drizzle
- 1/2 cup Organic powdered sugar
- 1 tsp Vanilla extract
- 2 tbsp Butter (melted)
- 2 tbsp Milk
Instructions
Make Muffins
- Preheat oven to 350. Line muffin tins with silicone muffin liners or parchment
- In bowl, combine oats, flour, sugar, salt, baking soda. Add in spices.
- Then in separate bowl melt butter, add eggs, vanilla, and pumpkin.
- Combine bowls and mix well.
- Scoop into muffin tips with ice cream scoop or 1/4 c scoop. Bake for 15-18 minutes. Until set. Allow to cool for 5 minutes.
Make Drizzle
- Combine drizzle ingredients in a separate bowl and whisk well. Start with 2 tbsp of milk and add as needed. You don't want it too think so be careful adding!
- Add drizzle to oat muffins after they have cooled for 5 minutes. Allow to set. Enjoy!
Notes
Einkorn Flour
- You can use all purpose flour, just decrease to 3/4 cup
Old Fashioned Oats
- Use regular or a gluten free kind if needed
Reheat
- Preheat the oven to 350 f. Place on a parchment lined baking sheet and bake for 10-15 minutes, then add drizzle before eating.
