Quick and Easy Pasta w/ Lemon and Garlic Sauce

I don’t know about you but I have a serious love to any dish with lemon! Not fake lemon extract but real zest and juice! You add it to any baked item or even in cooking and it just lifts and brightens the whole dish. This is exactly what the lemon does to this creamy pasta. Despite the fact that its cream based, this pasta is super light! You can add any of your favorite to this dish as well to change it up.
For example, I love adding seasoned grilled chicken in with this pasta but its also great with some roasted veggies. Broccoli and peppers are a great addition to this, pack a powerful punch, and would be a meat free option.
We are a gluten free household so always opt for a gluten free pasta. Some of my favorites are Jovial GF pasta, Aldi’s brown rice penne, but Aldi also has a new line of GF pasta that is fresh and you can find it in the refrigerated section! This is my favorite to use and makes it feel that much more special on a random weeknight. You can use any kind of pasta you would like, it all works here.
You can also prep this sauce in advance and store in cubes in the freezer for a later use. Just heat in a pan to warm and toss in the cooked pasta. You could also use this sauce (I would double the recipe) if making a cream based lasagna, would be delicious! I hope you enjoy this recipe as much as we do !
