Sausage Breakfast Sandwiches

Ingredients

  • 8 English muffin (See english muffin recipe or use 30 min bagel recipe)
  • 8 Egg
  • 1 lb Breakfast sausage (Naturally is the type we get- free from preservatives)
  • 8 slice Cheddar cheese

Instructions

  • Preheat skillet or griddle to 350- we like the griddle because you can do them all at once.
  • Roll the sausage out and use a circle shape (even a glass) to cut out the sausages.
  • Cook the sausages through on the griddle.
  • Slice the English muffins in half and place the sausage on the bottom.
  • We like to use the egg shapers but you can just cook them and cut them to size. Once the bottom of egg is cooked is cooked, flip and cook the egg all the way through. Place on top of the sausage.
  • Place the cheese on top and then the top of the muffin.
  • Wrap in parchment, then aluminum foil. Add to a gallon size freezer bag and freeze.
  • Remove and serve- a protein packed breakfast for busy mornings. See reheating/storage instructions below

Notes

Reheat
  • Preheat the oven to 350 degree. Place on a parchment lined sheet pan for 25-30 minutes. You can speed up by thawing in fridge the night before or using microwave to defrost.
Storage /Make Ahead
  • To store and make ahead, make sandwiches, and wrap in parchment, then foil. Freeze in ziploc bag for up to 2 months. Thaw in fridge overnight for a faster reheating time.
