Sausage, Kale, & Gruyere Casserole

Ingredients
- 16 Egg
- 1 cup Cottage cheese
- 1 tsp Salt and pepper (each)
- 1 lb Breakfast sausage (ground, cooked through)
- 2 cup Gruyere (shredded)
- 2 cup Kale (chopped)
Instructions
- In blender, add eggs, cottage cheese, salt, and pepper. Blend until smooth and no cottage cheese chunks are seen.
- Grease a 9x13 inch pan, add in egg mixture, sprinkle in cooked sausage, kale, and half of the gruyere cheese. Mix around.
- Add remaining cheese to the top layer.
- Bake at 350 degrees for 35-40 minutes until center is set! Enjoy!
Notes
Reheat
- Preheat the oven to 350f. Place on a parchment lined baking sheet and bake for 10-15 minutes until warm and ready to eat.
or - Unwrap and wrap in a damp paper towel and microwave at 30 second intervals until heated through.
