Sausage, Kale, & Gruyere Casserole

Ingredients

  • 16 Egg
  • 1 cup Cottage cheese
  • 1 tsp Salt and pepper (each)
  • 1 lb Breakfast sausage (ground, cooked through)
  • 2 cup Gruyere (shredded)
  • 2 cup Kale (chopped)

Instructions

  • In blender, add eggs, cottage cheese, salt, and pepper. Blend until smooth and no cottage cheese chunks are seen.
  • Grease a 9x13 inch pan, add in egg mixture, sprinkle in cooked sausage, kale, and half of the gruyere cheese. Mix around.
  • Add remaining cheese to the top layer.
  • Bake at 350 degrees for 35-40 minutes until center is set! Enjoy!

Notes

Reheat
  • Preheat the oven to 350f. Place on a parchment lined baking sheet and bake for 10-15 minutes until warm and ready to eat.
    or
  • Unwrap and wrap in a damp paper towel and microwave at 30 second intervals until heated through.
