Savory Breakfast Casserole

Ingredients

  • 30 oz Frozen hash browns
  • 6 Egg
  • 2 Zucchini (shredded)
  • 1 cup Sour cream
  • 1 cup Parmesan (Shred from a block)
  • 1 tsp Pink himalayan salt
  • 1 tsp Garlic powder
  • 8 oz Ham (cubed)
  • 2 Applewood smoked bacon (uncured, cut and cooked)
  • 1 Onion (diced)
  • 1 tbsp Everything but the bagel salt

Instructions

  • Preheat oven to 375
  • Chop the bacon and onion and cook in a skillet together- start the bacon first, after 5 minutes drain the grease and then add in the onion.
  • Combine all of the ingredients in a bowl.
  • Place parchment paper at the bottom of a 13x9 pan.
  • Pour into the pan and top with everything but the bagel salt.
  • Bake about 45 minutes.
  • Remove, let cool, cut into squares and serve.

Notes

Reheat
  • Preheat oven to 400 and bake about 15-20 minutes until warm. You can also use the microwave just be sure to remove wrapping and heat at 30 second intervals.
