Busy weeknights are normal this time of year…can you relate?! All the spring things kick into gear, and it can be so easy to reach for fast food or the same old dame old for dinner.

2 3/4 cups Jovial einkorn flour | |
2 tsp. baking powder | |
1 heaping tsp. salt | |
1 1/4 cups milk | |
1/4 cup tallow or butter melted | |
1/4 cup whole milk plain Greek yogurt | |
2TBSP. coconut sugar | |
2 eggs | |
3 green onion stalks chopped (about 2/3 cup) | |
1 cup extra sharp cheddar cheese |

preheat oven to 350
Mix flour, baking powder, sugar, and salt. In separate bowl mix milk, tallow, yogurt, eggs. Add green onion and cheese to flour mix. Then add wet mix. Use a spatula to incorporate. You can add an extra 1/4 C milk if it feels too dry here.
Line muffin tins with parchment (about 18) and fill 3/4 full. Bake 18-22 min, until set and golden.
*add a sausage patty, eggs or uncured bacon for a balanced meal.
