Shepherd's Pie
Servings: 8
Ingredients
Meat Mix
- 1 Yellow onion (medium sized, peeled, diced)
- 2 tsp Fresh garlic (peeled and chopped)
- 12 oz Peas and carrots (frozen bag)
- 1 lb Ground beef
Gravy
- 1/4 cup Butter
- 2 tbsp Einkorn flour (can sub with all purpose flour)
- 2 cup Beef broth
- 1 tsp Pink himalayan salt
- 1/2 tsp Black pepper
Toppers
- 3 cup Mashed potatoes (see mashed potato trick in base recipes)
- 2 cup Cheddar cheese (buy block and shred yourself)
Instructions
Make Gravy
- In pot, add 1/4 c butter and melt over medium heat. Then add einkorn flour and whisk well for 2 min. Then add broth and seasoning and whisk until thickened. Remove from heat and set aside.
Make Filling
- In large skillet, saute onion and garlic for 2-3 minutes. Then add ground beef and cook through. Add frozen veggies and warm.
Assemble
- Grab a 9x13 pan, place ground beef and veggies in the bottom. Then add gravy on top and mix.
- Then take 8-10 frozen potato squares and place on top or add fresh made potatoes if you have them. Top with cheddar cheese.
- Bake at 375 for 20-25 min. Add cheese for last 2-3 minutes to melt on top. Enjoy!
Notes
Einkorn Flour
- Can use all purpose flour but use 1/4 cup instead of 1/3 cup.
Mashed Potatoes
- Can prep them in advance and freeze using the mashed potato trick recipe or make them fresh that day.
