Short Cut Mexican Quiche
Servings: 8
Ingredients
- 1 Large tortilla (about 15 inches- can be homemade or bought)
- 1/4 cup Cottage cheese
- 8 Egg
- 1/4 cup Salsa (your favorite kind)
- 3/4 cup Cheddar cheese (shredded, I prefer to buy block and shred myself )
- 1/4 cup Cilantro (chopped)
- 1 tsp Salt and pepper
Instructions
- Preheat oven to 375 degrees, grease a 12 inch cast iron skillet
- In a blender, add cottage cheese, salsa, and eggs. Season with salt and pepper. Blend for 30-45 seconds.
- Add large tortilla into the cast iron skillet, edges should come up onto the sides like a pizza
- Dump in egg mixture and top with cheese.
- Bake for 20-25 minutes until center is set. Let cool for 5 minutes before cutting
- Top with fresh chopped cilantro, salsa, and sour cream to dip!

Torillas
- Use our recipe for homemade einkorn flour tortillas. You can sub in all purpose flour as well.
