Short Rib Bowl
This is an easy weeknight short rib bowl. Don’t let the long list of ingredients fool you… it comes together SO fast. The thick, flavorful sauce created with onions, carrots, tomatoes and red wine will leave you coming back for thirds. Creating it in a slow cooker frees up your time to get things done if you have a crowd, or a lazy Sunday!
For even better flavor, create the rub and let rest on the ribs 1-2 days before making.

3 lbs. short ribs | |
1/4 tsp. allspice | |
1 tsp. garlic powder | |
1 tsp. onion powder | |
1/4 tsp. thyme | |
1/4tsp. chipotle chili powder | |
1 onion chopped | |
3 carrots peeled and chopped | |
1 cup red wine | |
28 oz. whole peeled tomatoes | |
6 oz. tomato paste | |
16 oz. beef broth | |
2 tsp. Himalayan salt | |
1 bay leaf |

In a bowl combine the all spice all the way through the chipotle powder.

Rub on short ribs.

Pour 2 TBSP EVOO in a pan on medium heat.

Place ribs in and sear on each side about 5 minutes.

In the slow cooker add ribs and all remaining ingredients. Cook on high for 6 hours.
