Simple Beef & Vegetable Stew
Servings: 8
Ingredients
- 1 lb Beef stew meat (cubed)
- 1 Yellow onion (peeled, chopped)
- 3 Whole garlic cloves (peeled, chopped)
- 1 tsp Garlic powder
- 1 tsp Salt and pepper (each)
- 2 tbsp Einkorn flour
- 8 cup Beef broth (bouillon or broth)
- 20 oz Frozen mixed veggies
- 4 Yukon gold potato (diced)
Instructions
- Heat a large soup pot or Dutch oven over medium heat with 1-2 tablespoons of olive oil. Add in onion and garlic. Sautee for 3-4 minutes until golden brown.
- Add in beef stew meat and sauté for 5 minutes. While stirring add in salt, pepper, and garlic powder. Mix well. After 5 minutes add in the flour and mix well.
- Once flour has been mixed, add in beef broth, frozen veggies, and potatoes. Mix and then turn heat to a medium-low and add the lid. You'll want to simmer you pot for about 15-20 minutes.
- Serve with some delicious garlic knots or homemade rolls. So good on a cold winter day.
Notes
Einkorn Flour
- You can swap einkorn flour for all purpose flour. Just decrease amount to 1 tbsp.
Frozen Veggies
- Use any combination you and your family like!
