Simple Breakfast Prep: Egg and Bacon Breakfast Burritos

Mornings can be such a whirlwind and the best laid plans to get a healthy breakfast into yourself and your family might not go just as you planned. We totally resonate as busy families. We know though that ourselves and our kids start our days off better with a balanced breakfast. So we went to our kitchen to find some solutions.

Breakfast burritos are such a staple at my house! They can be changed up so you are always eating a different variety, you can fill them with protein, and they can be portable if you need to eat and run. I love these because you can use what you have on hand and make something your whole family will love!

I make my tortillas homemade (recipe here) but you can always buy your favorite ones! Then with just a few simple ingredients these babies will be ready to roll up and store in the freezer until you need them. This one recipe uses a dozen eggs and will make you between 12-15, depending on how full you fill them or the size of your tortillas. The ones I used were about a normal taco size.

I wrap mine in parchment first as I do not like my hot food to touch aluminum, then kept in freezer. To reheat, just preheat the oven to 350 and leave in for 20-25 min. You can be getting ready, sipping those last few sips of coffee, and wrangling shoes onto everyone’s feet while these are cooking away! Just grab and go and everyone will start the day off with something balancing and healthy.

Ingredients:

Adjust Servings
1dozen eggs
1c other protein of choice (sausage, bacon, etc)
1 c any veggies you might like
1 c cheese of choice ( or you can omit for dairy free option)
1 tsp salt
1/2 tsp pepper

Directions

Make Egg Filling
Crack a dozen eggs into a bowl Add salt and pepper Add any other protein (make sure its cooked) and any veggies or herbs you might like Add to hot skillet and cook until eggs are set

Assemble Burrito/Storage
To assemble, I use parchment sheets I bought off amazon (linked in our amazon shop on Instagram) I cut them in half and then tear off same sizes pieces of foil Then, lay down your taco shell, add some egg mixture, roll up Place on parchment first and roll, then roll again in foil and crimp the edges until they are sealed Repeat until all are sealed and toss in freezer (will keep up to 3 months) * To reheat, preheat oven to 350, let rewarm wrapped up for 20-25 min! Voila!
