Simple Fruit and Yogurt Bites with Homemade Chocolate Shell

On hot summer days my kids are constantly begging me for ice cream. Which, don’t get me wrong, we do ice cream. But not everyday. And sometimes not even every week. But I have found a little secret…these yogurt bites! They are truly a tasty treat and my kids think they are getting something sugary when in reality its pretty healthy!
Its just a few simple ingredients and I love how we customize with what we have on hand. For example, I use bananas in this one but have also use blueberries, raspberries, strawberries, etc. I do have one kiddo who prefers non with chocolate so its easy to leave the shell off of a few to accommodate the varying taste buds in each house.
We made a double batch of these and freeze them. You can do a dolloped version like the ones pictures here or you can make into a bark and just break into pieces! Either will work!
The magic shell is pretty cool! You can use the version here with just chocolate chips and coconut oil or you can do a dairy free version I love that is 2 tbsp coconut oil, melted in a saucepan. Take off the heat, add in vanilla, 2 tbsp honey or maple syrup, pinch of salt, and 2 tbsp cocoa powder. Whisk well and allow to cool before drizzling over the frozen yogurt bites or bark.
