Skillet Chicken with Mushroom and Wine Sauce

Ingredients

  • 1 1/2 lb Thin sliced chicken breast

Coating

  • 1/2 cup Einkorn flour
  • 1/4 cup Arrowroot
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/4 tsp Ground cayenne pepper
  • 1 tsp Pink himalayan salt

Sautee in Pan First

  • 2 tbsp Butter
  • 1 Onion (finely chopped)
  • 4 oz Crimini mushrooms
  • 3 clove Garlic

Final Ingredients

  • 1/2 cup Dry white wine (not chardonnay)
  • 1/2 cup Whole milk

Instructions

  • In a bowl whisk together all of the coating ingredients- flour, arrow root, onion powder, garlic powder, cayenne pepper and salt.
  • Dredge the chicken in the mixture one at a time coating both sides and place on a plate.
  • Heat a cast iron skillet over medium heat.  Add in 2 TBSP butter and sautee the onions, garlic and mushrooms.
  • Remove the mushrooms,garlic and onions and set aside.
  • Place the chicken onto the pan and sear.  Once browned flip and do the same thing to the other side.
  • Pour in the white wine to deglaze the pan.
  • Pour in the milk and add the mushrooms, garlic and onions back in.
  • Let simmer until sauce thickens.
  • Serve over your favorite side- we like mashed potatoes linked in the component recipe.
