Soup For Days
Servings: 8
Ingredients
- 1 Onion (medium, yellow)
- 1 tbsp Fresh garlic (peeled and chopped)
- 1 lb 80 percent lean ground beef
- 28 oz Crushed tomatoes
- 32 oz Chicken broth
- 4 tbsp Tomato paste
- 20 oz Mixed vegetables (see note)
- 15 oz Kidney beans
- 15 oz Pinto beans
- 1 tbsp Italian seasoning
- 1 cup Penne (uncooked, can use gf)
- 2 tbsp Honey
- 1 tsp Garlic powder
- 1 cup Parmesan (grated)
Instructions
- Heat pot over med/high heat. Add onion and garlic, brown a few minutes while stirring. Then add in ground meat and cook through.
- Then add crushed tomato, chicken broth, ketchup, frozen veggie, beans, seasoning. Stir and bring to boil.
- Then add pasta, bring back to a boil and turn off heat for 10 min to cook.
- Once cooked, add honey and parmesan cheese to garnish. Enjoy!
Notes
Mixed Vegetable
- I love using frozen veggies for this, so simple! I usually use broccoli and green bean/carrots. But use whatever your family will like! Fresh veggies work well too like zucchini, cauliflour, etc.
REHEAT/COOK IF FROZEN
- Thaw soup in fridge the night before then reheat in a saucepan. If you forget or need right away, defrost in microwave then reheat in saucepan until heated through
