Sticky Coconut Mango Chicken
Servings: 6
Ingredients
- 1 tbsp Garlic (peeled and chopped)
- 1/4 cup Chicken broth
- 1/16 oz Coconut milk (canned, full fat)
- 1 tsp Curry powder (I love Frontier Brand)
- 1/4 cup Cocoaminos
- 3 tbsp Honey
- 1 cup Frozen mango (chopped)
- 2 tbsp Einkorn flour (see note)
- 1 1/2 lb Chicken tenders
- 1 tsp Sea salt
- 1/2 tsp Black pepper
- 2 tbsp Extra virgin olive oil
- 12 oz Frozen broccoli
- 2 cup Rice (cooked in chicken broth or water)
Instructions
- In large skillet or dutch oven, add a drizzle of olive oil and cook chicken until done, about 5-6 minutes per side. Remove.
- Add broccoli and cook a few minutes until tender, then remove and set aside.
- In same skillet, add another drizzle of oil and saute garlic for a few seconds, then add chicken broth, coconut milk, curry seasoning, cocoaminos, honey/sugar, and mango. Mix well and bring to a low boil. Then add flour and stir to thicken. Season with salt and pepper as needed.
- Once thickened, add back in cooked chicken that has been cubed or sliced and cooked broccoli.
- Serve over cooked rice and garnish with cilantro if desired!
Notes
Einkorn Flour
- Can sub with all purpose flour, just use 1 tbsp
