Strawberries n Cream Granola Bars

Ingredients

Granola Bars

  • 2 cup Rolled oats  (can use quick or old fashioned here)
  • 1 cup Einkorn flour (see note below)
  • 1/2 tsp Pink himalayan salt
  • 2/3 cup Coconut sugar
  • 1/2 cup Butter (melted)
  • 2 tsp Vanilla extract
  • 1/4 cup Maple syrup
  • 4 oz Freeze dried strawberries (ground into a powder)

Glaze

  • 2 tsp Butter (melted)
  • 1/2 tsp Pink himalayan salt
  • 1 cup Powdered sugar (I used an organic kind without corn starch)
  • 1 tsp Vanilla extract
  • 2 tbsp Milk

Instructions

Make Bars

  • In a bowl, add  2 c oats, 1 c flour, 1/2 tsp salt, and 2/3 c coconut sugar. Mix well.
  • In a separate glass bowl, add 1/2 c butter and melt. Then add in 1/4 c maple syrup, 2 tsp vanilla, and 2 eggs.
  • In food processor or blender, add 4 oz freeze dried strawberries and pulse until a powder forms. Add to dry ingredients.
  • Then combine the dry and the wet ingredients and mix well.
  • In greased 9x13 pan, add mixture and bake at 350 degrees for 18-22 minutes. You want them to be golden brown around the edges. Remove from oven and cool.

Make Glaze

  • In a bowl add 2 tbsp melted butter, 1/2 tsp salt, 1 c powdered sugar, 1 tsp vanilla, and 2 tbsp milk. Whisk well and let set for 5 minutes. Then drizzle over the top of the bars.
  • Slice the bars into 14 equal pieces. You can store at room temp for a week or so or freeze them to keep longer. I will often pull them out of the freeze and place in backpacks for snacks at school. They thaw quick!

Notes

Einkorn Flour
  • Can use all purpose flour but decrease to 3/4 cup instead of 1 cup
