Strawberry and Blueberry Pancake Muffins

Ingredients
- 2 cup Einkorn flour (1 1/2-1 3/4 regular all purpose flour)
- 2 tsp Baking powder
- 1 tsp Pink himalayan salt
- 1/4 tsp Baking soda
- 1 1/2 cup Whole milk
- 1 1/2 tbsp Distilled white vinegar
- 1 Egg
- 1/4 cup Maple syrup
- 1 tsp Vanilla extract
- 1 oz Freeze dried strawberries (crushed up)
- 1 cup Blueberries
Instructions
- Mix flour, baking powder, baking soda and salt in a large bowl.
- In a small bowl mix milk and vinegar and let sit 5 minutes.
- To the flour mixture add the milk mixture, egg, maple syrup and vanilla.
- Spoon 1 TBSP. into the bottom of 12 lined muffin tins. Add the strawberries and blueberries into the mix and scoop evenly into all 12 muffin tins.
- Bake at 350 for 15-20 minutes until the center comes out clean when poked with a toothpick.

Reheat
Preheat the oven to 350 f. Place on a parchment lined baking sheet and bake for 10-15 minutes or in microwave at 30 second intervals.
