Strawberry and Yogurt Pancakes

Ingredients

  • 4 oz Freeze dried strawberries (I get these from Aldi!)
  • 2 1/2 cup Einkorn flour (see note below for all purpose)
  • 2 tsp Baking powder
  • 1 tsp Pink himalayan salt
  • 2 tbsp Coconut sugar (can use cane sugar)
  • 2 Egg
  • 3 3 tbsp Butter (melted)
  • 1/4 cup Yogurt (plain, whole milk)
  • 1 3/4 cup  Milk (use any kind you like)
  • 2 tsp Vanilla extract

Instructions

  • Heat griddle over low heat, add a bit of butter to griddle.
  • In a large bowl, add wet ingredients and whisk well. Then add dry ingredients and whisk together until well incorporated. Allow to set for 10 minutes before making.
  • Add about 1/4-1/3 cup of batter to hot griddle. Once center has tiny bubbles, flip for another minute or so.
  • Either enjoy right away with your favorite syrup or follow prep instructions above.

Notes

Einkorn Flour
  • Use 2 cups all purpose if you prefer instead of einkorn
Reheat
  • Can thaw in fridge overnight, microwave wrapped in damp paper towel at 20 second intervals, or warm in oven at 300 for 10 minutes on sheet pan
