Strawberry Banana Oat Bake

Ingredients
Oat Bake Ingredients
- 1 1 Banana (peeled and mashed)
- 3/4 cup Ghee (ghee or butter works well here/softened )
- 1 tsp Vanilla extract
- 2 Egg
- 1 cup Coconut sugar
- 2 oz Freeze dried strawberries (blended into a powder)
- 1 tsp Baking powder
- 2 cup Rolled oats (I love One Degree Foods brand)
- 1/2 tsp Pink himalayan salt
Optional Drizzle
- 1 cup Powdered sugar (I get an organic version)
- 2 tbsp Ghee (ghee or butter works here, melted)
- 1 tsp Vanilla extract
- 1/4 tsp Pink himalayan salt
- 3 tbsp Milk (use any milk you choose)
Instructions
Make Oat Bake
- Preheat oven to 350 degrees. Grease a 8x8 pan and set aside
- In a large bowl, add mashed banana, ghee (or butter), vanilla, eggs, strawberries, and coconut sugar. Mix well. Then add in remaining oat bake ingredients.
- Add mixture into prepared 8x8 pan, bake for 25-30 minutes until set in the middle.
Make drizzle
- If you haven't prepped the drizzle, mix all drizzle ingredients in a bowl and set aside
- Once oat bake is ready, let cool for 5-10 minutes. Slice and add drizzle before serving.
Notes
Storage
- If you have extra, wrap up and store in ziploc bag in fridge for a few days or you can freeze for up to 2 months. To thaw, stick in fridge the night before use.
