Strawberry Banana Oat Bake

Ingredients

Oat Bake Ingredients

  • 1 1 Banana (peeled and mashed)
  • 3/4 cup Ghee (ghee or butter works well here/softened )
  • 1 tsp Vanilla extract
  • 2 Egg
  • 1 cup Coconut sugar
  • 2 oz Freeze dried strawberries (blended into a powder)
  • 1 tsp Baking powder
  • 2 cup Rolled oats (I love One Degree Foods brand)
  • 1/2 tsp Pink himalayan salt

Optional Drizzle

  • 1 cup Powdered sugar (I get an organic version)
  • 2 tbsp Ghee (ghee or butter works here, melted)
  • 1 tsp Vanilla extract
  • 1/4 tsp Pink himalayan salt
  • 3 tbsp Milk (use any milk you choose)

Instructions

Make Oat Bake

  • Preheat oven to 350 degrees. Grease a 8x8 pan and set aside 
  • In a large bowl, add mashed banana, ghee (or butter), vanilla, eggs, strawberries, and coconut sugar. Mix well. Then add in remaining oat bake ingredients.
  • Add mixture into prepared 8x8 pan, bake for 25-30 minutes until set in the middle.

Make drizzle

  • If you haven't prepped the drizzle, mix all drizzle ingredients in a bowl and set aside 
  • Once oat bake is ready, let cool for 5-10 minutes. Slice and add drizzle before serving.

Notes

Storage
  • If you have extra, wrap up and store in ziploc bag in fridge for a few days or you can freeze for up to 2 months. To thaw, stick in fridge the night before use.
