Stuffed Pork Loin

Ingredients

  • 5 1/2 lb Pork loin (trimmed)
  • 8 oz Cream cheese
  • 4 Whole garlic cloves (pressed)
  • 1 tsp Pink himalayan salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Mustard powder
  • 1/2 cup Fresh basil (Chopped)
  • 1/2 cup Parmesan (grated from a block)
  • 8 piece Bakers twine (cut into 8 inch strips)

Putting it together in the pan

  • 1 Onion (Chopped)
  • 1 1/2 lb Mini potatoes
  • 1 tsp Pink himalayan salt
  • 1 tbsp Olive oil
  • 1/2 cup Grated parmesan cheese (fine from the block)
  • 1 tsp Garlic powder

Instructions

  • In a food processor combine the cream cheese, garlic, salt, garlic powder, onion  powder, mustard powder and fresh basil and parmesan,  Pulse until blended together well. 
  • Cut and roll the pork loin using a sliced rolled pork loin method. 
  • Slather the cheese mixture in top leaving 1/2 inch around the edges. 
  • Roll from one side to the other.
  • Lay the strips of baking twine out on the counter and place the pork loin on top. *video coming soon or refer to our instagram.
  • Tie each string and cut the excess
  • Preheat the oven to 375f and place a cast iron skillet over medium heat on the stove top.
  • Once hot, place the pork loin on the skillet.  Searing all 4 side about 5 minutes. As you sear the last side, add the potatoes around first, followed by the asparagus on top. 
  • Drizzle on the olive oil, salt and garlic powder.  Followed by the onions and parmesan cheese. 
  • Place in the oven for about an hour and a half until the internal temperature reaches 145 f.
  • Remove and let rest 5 minutes.  Cut into 10 slices and serve.  Don't forget to remove the bakers twine!
