Sweet Corn Muffins

Ingredients

  • 2 cup Einkorn flour (can use all purpose or gf, see note)
  • 1 cup Cornmeal
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 1/2 cup Sugar (use 1 cup if using coconut sugar)
  • 1/2 cup Yogurt
  • 1/2 cup Butter (melted)
  • 1 1/4 cup Milk (can use non dairy substitute)
  • 2 Egg
  • 1 tsp Vanilla extract

Instructions

  • Line 18 muffin cups with liners and preheat oven to 350 degrees 
  • In a large bowl, add 1/2 c melted butter, 1 1/4 c milk, 2 eggs, 1 tsp vanilla, and 1/2 c yogurt. Mix well. 
  • Then add 2 c einkorn flour, 1 c cornmeal, 2 tsp baking powder, 1 tsp salt, and 1/2 c sugar. Whisk in until just combined. Do not overmix. 
  • Spoon about 1/4 cup of batter into each muffin tin.
  • Bake at 350 degrees for 18-20 minutes, until center is set.
  • Allow them to cool for 5 minutes on wire rack, enjoy!

  • Note allergen substitutes if necessary
Flour
  • If you sub all purpose or gf, use 1 3/4 cups instead of 2
