Sweet Corn Muffins
Servings: 18
Ingredients
- 2 cup Einkorn flour (can use all purpose or gf, see note)
- 1 cup Cornmeal
- 2 tsp Baking powder
- 1 tsp Salt
- 1/2 cup Sugar (use 1 cup if using coconut sugar)
- 1/2 cup Yogurt
- 1/2 cup Butter (melted)
- 1 1/4 cup Milk (can use non dairy substitute)
- 2 Egg
- 1 tsp Vanilla extract
Instructions
- Line 18 muffin cups with liners and preheat oven to 350 degrees
- In a large bowl, add 1/2 c melted butter, 1 1/4 c milk, 2 eggs, 1 tsp vanilla, and 1/2 c yogurt. Mix well.
- Then add 2 c einkorn flour, 1 c cornmeal, 2 tsp baking powder, 1 tsp salt, and 1/2 c sugar. Whisk in until just combined. Do not overmix.
- Spoon about 1/4 cup of batter into each muffin tin.
- Bake at 350 degrees for 18-20 minutes, until center is set.
- Allow them to cool for 5 minutes on wire rack, enjoy!
