Taco Soup
Servings: 10
Ingredients
- 10 fl oz Frozen corn
- 1 Onion (peeled and chopped)
- 1 tbsp Chopped garlic
- 1 lb Ground beef
- 2 package Taco seasoning (Siete Brand in our favorite)
- 28 fl oz Crushed tomatoes
- 6 fl oz Tomato paste
- 5 cup Chicken broth
- 8 oz Black beans
- 7 fl oz Diced green chilis
- 2 tsp Salt
- 1 serving Favorite toppings (we used crushed tortilla chips, grated cheese, sour cream, salsa, and avocado)
Instructions
- In a large soup pot over medium heat, add 10 oz frozen corn, 1 peeled and chopped onion, and 1 tbsp of chopped garlic with 1 tbsp of oil.
- Saute until golden brown
- Then add in 1 lb of ground beef and cook through
- Add in 2 pkgs of your favorite taco seasoning (we love Siete Brand)
- Mix well
- Then add in 28oz crushed tomatoes, 6oz of tomato paste, 2 tsp salt, 5 c of chicken broth, 8oz black beans, and 7oz of diced green chilis. Mix well and bring to a boil.
- Turn off heat, and serve with your favorite toppings! We love crushing our favorite tortilla chips over the top with grated cheese, sour cream, avocado, and salsa.
Notes
Storage
- Store leftover in an airtight container for up to 3-4 days. You can also freezer leftovers for up to 2 months. Thaw in fridge and reheat in a pan to reheat!
