If you’ve never tasted homemade noodles before, get ready for an extraordinary experience that will redefine your relationship with pasta. When it comes to flavor, texture, and sheer indulgence, there’s nothing quite like homemade noodles.

Most people think you need fancy equipment or all day to make these but nothing could be further from the truth. These noodles come together with just a few ingredients and a rolling pin! A fresh, delightful dinner will be ready in no time!

Trust me, if you want to impress some people coming over for dinner, tell them you made the spaghetti noodles from scratch! And it will be the most amazing spaghetti they ever will have!

The noodles are soft, nutty, and just are a texture you cannot possibly buy in the store! You can make these in advance too! All you have to do is freeze after you have cut them into strips. Then when you are ready to cook, just toss the frozen noodles in boiling water and cook! They might need a few extra minutes but that’s it! Tastes just as fresh as the day you made them!

3 c flour
3 eggs, cracked and scrambled

Make dough
To make dough, use a bowl or you can use the counter If using a bowl just add eggs and flour to a bowl and begin to incorporate. Add a few tablespoons of water or more as needed. Dough should be firm but soft. Not sticky! If using the counter, make a well in the flour, add eggs in the center and slowly begin to incorporate. Make sure not to ruin edges of flour or eggs will run out. Add water a few tablespoons at a time until texture is soft but firm. Allow to rest, covered, 20 min.

Roll out
Flour surface well, roll our dough into a large rectangle Should be thin enough you can almost see through it but no holes are forming Allow to dry our here for 30 min
Once dried, start at longest end and fold dough over a few inches each time Then, once folded all the way, go to shortest end and begin slicing in thin slices or as thick as you want the noodles to be Once cut, unroll them and toss around to shake out You can either freeze until you want to use from here or cook them right away for 3-4 minutes in boiling water! Voila!
