You can also makes these ahead by waiting until just before guests arrive to pop them back into the oven.

6 potatoes baked
1 head roasted garlic
1 cup sour cream
1 cup shredded gruyere
1 cup shredded parmesan

I like to roast the garlic and bake my potatoes at the same time. Once done, move on to the next step.
